Gluten and Dairy Free Huevos Rancheros

This traditional rural Mexican breakfast is a great recipe to try for a lazy Sunday morning brunch. All the ingredients are naturally free of gluten and dairy making it an easy, low cost recipe to prepare.




  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red pepper, diced
  • 1/2 small red chilli, deseeded and finely sliced
  • 400g can of chopped tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 garlic clove, minced
  • 2 eggs
  • salt and pepper for seasoning

  1. Heat the olive oil over a medium heat
  2. Add in the onion, pepper, chilli and garlic
  3. Saute for about 5 minutes until soft
  4. Stir in the chopped tomatoes, oregano and basil
  5. Season with salt and pepper
  6. Cook for a further 5 minutes
  7. Make two small holes in the tomato mix and crack an egg into each hole
  8. Cook for another 5 minutes or until the eggs are set
