Hello everyone, I’m back with an easy breakfast recipe for Gluten and Dairy Free Egg & Cheese Quesadillas. As with most of my recipes you can customise your quesadilla to suit your taste or whatever you have in the fridge. Some add ins that work with well in this quesadilla includes smoked bacon, tomatoes, spinach, chorizo or some spring onions. This is a tasty little recipe to try out if you fancy something new for breakfast.

  1. Whisk together the eggs, dairy free milk and seasoning

  2. Melt the dairy free spread in a small pan over a medium heat

  3. Scramble the eggs for about 3 minutes

  4. Add the eggs to one half of each of the tortillas, top with the dairy free cheese and then fold shut

  5. Heat a shallow pan over a high heat, add the quesadillas and toast on each side for a couple of minutes

  6. I served mine with some mashed avocado
