Welcome to my latest recipe for Gluten Free and Dairy Free Strawberry Breakfast Pastries.
Hope you are all having a good week. I’ve just realised this morning as I go to share my final recipe of the week I’ve not actually shared the recipes I said I would in my coming up this week post. I must have got confused when typing it all up and shared the apple nacho recipe instead of the apple and peach rooibos punch. Never mind, I’ll swap them around and you’ll get the rooibos punch recipe next week.
I recently picked up a roll of gluten free and dairy free pastry in Tesco by JusRoll. I do like to make my own pastry but often find I don’t have the time so it is a nice to have this in the fridge. If you want to make a quick breakfast pastry then you can use this recipe and the pre-bought pastry.
These little tarts are topped with dairy free coconut yoghurt and fresh strawberries.

Strawberry Breakfast Pastries (Gluten Free, Dairy Free)
Puff pastry topped with coconut yoghurt and strawberries
Preheat the oven to 180 oC
Unroll the pastry sheet and cut into 6 rectangles
With a sharp knife score a rectangle on each pastry slice leaving aborder of 1 cm
Prick inside the scored rectangle with a fork
Brush pastries with the beaten egg
Bake in the oven for 10 minutes
Push down the middle rectangles and return to the oven for 10 minutes
Allow to cool then top with the coconut yoghurt and strawberries
