Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Strawberry Coconut Baked Oats.
The weather has been so miserable during this lockdown and I’ve noticed a few more people are finding it tough. Hopefully it will stop raining soon and I can get back outside for some fresh air. Spring will be with us soon and the lighter nights are perfect for better food photography!
This week I’ll share a roundup of my favourite pancake recipes, slow roast 5-spice pork and some chocolate ice buns.
Today’s recipe is perfect for a Sunday morning. I’ve made some healthy baked oats packed with strawberries and coconut.

Strawberry Coconut Baked Oats (Gluten Free, Dairy Free)

Preheat the oven to 200 oC
Mix together the oats, yoghurt, honey, eggs, cinnamon, coconut and strawberries
Divide between two individual casserole dishes and bake in the oven for 30 minutes
Enjoy warm, I served mine with a little dairy free coconut yoghurt and more strawberries
