Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Toaster Crumpets.

I love a little toaster crumpet topped with some peanut butter and mashed banana! They are actually fairly easy to make and don’t take long at all, you only need to leave the yeast for 20 minutes to activate. I tend to make these in a big batch, freeze the rest and when I want one I put it straight in the toaster on the defrost setting.

  1. Warm the dairy free milk and water in the microwave for 30 seconds

  2. Beat together all the ingredients until smooth

  3. Leave to rise for 20 minutes

  4. Heat a drizzle of oil in a frying pan over a medium heat

  5. Add one tablespoon of mixture to the pan and smooth into a circle about 3cm thick

  6. Cook until bubbles have formed and burst, about 5 minutes

  7. Turn the crumpets over and cook for another 2 minutes

  8. Serve with hot with some dairy free spread
