Instructions

  1. Preheat the oven to 180 oC
  2. Beat together the caster sugar and the dairy free spread until light and fluffy
  3. Add the three eggs individually, beating well between each addition
  4. Add in the flour, cinnamon and xanthan gum
  5. Mix until well combined
  6. Split the mixture between 10 cupcake moulds lined with paper cases
  7. Bake in the centre of the oven for 25 minutes
  8. Remove from the oven and allow to cool
  9. Using a knife, carefully cut a hole in the centre of the top of the cupcake and carve out a small hollow
  10. Fill this hole with apple sauce
  11. To make the frosting beat together the dairy free spread and icing sugar
  12. Pipe onto the cupcakes and dust with a little extra cinnamon
