Gluten and Dairy Free Creamy Chicken & Chorizo Pasta Bake

serves / makes 4


  • 200g gluten free pasta
  • 1 tablespoon olive oil
  • 2 chicken breasts, cubed
  • 1 onion, diced
  • 1 red pepper, diced
  • 2 garlic cloves, crushed
  • 100g chorizo sliced, make sure it is dairy free
  • 300g passata
  • 125ml dairy free cream
  • 2 teaspoons mixed herbs
  • salt and pepper for seasoning
  • handful dairy free cheese, grated


  1. Preheat the oven to 180 oC
  2. Bring a large pan of salted water to the boil and cook the pasta for 8 minutes
  3. In a large pan place the olive oil and garlic on a medium heat
  4. Add the chorizo and chicken and cook for 5 minutes
  5. Add in the onion and pepper
  6. Saute for 5 minutes
  7. In a small saucepan place the passata, cream, mixed herbs and season with salt and pepper
  8. Bring to the boil and simmer for 5 minutes
  9. Pour the sauce and pasta into the chorizo and chicken mix
  10. Place into a casserole dish and top with the grated cheese
  11. Bake in the oven for 15 minutes
