Gluten and Dairy Free Cream of Tomato Soup

serves / makes 6 people

Ingredients

  • 2 onions, diced
  • 2 garlic, cloves, minced
  • 2 tablespoons olive oil
  • 900g tomatoes, chopped
  • 400g can of chopped tomatoes, quartered
  • 2 teaspoons oregano
  • 2 teaspoons basil
  • salt and pepper for seasoning
  • 1 teaspoon sugar
  • 400ml vegetable stock
  • 250ml dairy free cream (I used Alpro soya cream)

Method

  1. Place the olive oil in a large pan over medium heat
  2. Add in the onion, garlic, oregano and basil
  3. Saute for 5 minutes
  4. Stir in the fresh and chopped tomatoes, sugar, herbs and seasoning
  5. Pour in the vegetable stock
  6. Cover the pan with a lid and bring to the boil
  7. Simmer for 20 minutes
  8. Blend the soup
  9. Stir in the dairy free cream and heat for a couple of minutes
