Gluten & Dairy Free Apple & Sultana Breakfast Cakes

A little like a Welsh griddle cajke but with apples and sultanas

Ingredients
  

  • 1 egg beaten
  • 120 g apple sauce
  • 1 tsp ground cinnamon
  • 100 g gluten free flour
  • 1/2 tsp baking powder
  • 40 g sultanas

Instructions
 

  • In a large mixing bowl combine the egg, apple sauce, cinnamon, flour, baking powder and sultanas
  • Shape into four flat cakes
  • Heat a drizzle of olive oil over a low to medium heat in a large shallow pan
  • Cook the cakes for 5 minutes on each side
