Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Potato Patties.
This is one of those simple dishes that just tastes so good and it’s perfect as a starter or as a light lunch. As with most of my recipes you can customise this to your own tastes by adding different vegetables and herbs.

Potato Patties (Gluten & Dairy Free)
Ingredients
Instructions

Place the cubed potatoes in a large pan of salted water

Bring to the boil and then simmer for 15 minutes or until tender

Drain the potatoes then return them to the pan

Cook on a low heat for 1 minute, this dries out the potatoes

Mash the potatoes

Stir in the onion, peppers, coriander, seasoning, garlic, cumin, cheese and flour

Form into small patties using about 1 tablespoon of mixture

Chill in the fridge for 30 minutes

Add a drizzle of olive oil in a shallow pan over a medium heat

Cook the patties for 2 minutes on each side or until golden and crisp

Serve immediately with a crisp salad
