Gluten and Dairy Free Thai Basil Chicken

Ingredients

  • 1 tablespoon cooking oil
  • 2 chicken breasts, diced
  • 1 tablespoon red Thai curry paste
  • 1 onion, chopped
  • 1 garlic clove, minced
  • large handful of diced green beans
  • 2 tablespoons cashew nuts
  • 2 tablespoons tamari (gluten free soy sauce)
  • 6 Thai basil leaves (you can use ordinary basil)
  • 2 teaspoons sweet chilli sauce, optional

Directions

  1. Add the oil in to a shallow pan over a medium heat
  2. Add in the garlic and curry paste and fry for a couple of minutes
  3. Stir in the chicken, onion and green beans
  4. Saute for 10 minutes
  5. Stir in the cashew nuts, tamari and the basil leaves
  6. Stir fry for 2 minutes
  7. Serve with rice and a drizzle of sweet chilli sauce
