Gluten and Dairy Free Salmon Thai Burgers

Serves 2

Ingredients

For the burgers:

  • 200g salmon fillet, skin removed
  • 25g gluten free breadcrumbs
  • 1 tablespoons mayonnaise
  • 2-3 teaspoons red Thai curry paste
  • 1 teaspoon coriander leaf
  • 1 teaspoon freshly grated ginger
  • 1 garlic clove, minced
  • salt and pepper, for seasoning

To serve:

  • 2 gluten free rolls
  • spinach
  • gluten free onion rings (I picked some up in Tesco)
  • mayonnaise
  • sweet chilli sauce
  • sliced tomatoes

Directions

  1. Place the salmon, breadcrumbs, mayo, curry paste, ginger, garlic, coriander and seasoning into a food processor
  2. Shape into 2 patties and place into the freezer for 15 minutes
  3. Heat a splash of olive oil in a shallow pan over a medium heat
  4. Cook for about 4 minutes on each side
  5. Serve with fries in a bun with chilli sauce, onion rings, mayo, tomatoes and spinach
