Gluten and Dairy Free Pork and Mushroom Noodles

Serves 2

Ingredients

  • 150g gluten free noodles
  • 2 good quality gluten free sausages, sliced into thick rings
  • 2 tablespoons sesame oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon Chinese 5 spice
  • 1/2 teaspoon dried chilli flakes
  • 1 small onion, finely diced
  • 1 pepper, finely slices
  • 100g mushrooms, sliced
  • 3 tablespoons, gluten free soya sauce
  • salt and pepper for seasoning

Method

  1. Cook the noodles per the instructions on the packet
  2. Heat the sesame oil in a wok or large shallow pan
  3. Add the garlic, chilli and 5 spice
  4. Add the sausage and stir fry for 5 minutes
  5. Add in the vegetables and stir fry for 4 minutes
  6. Season with salt and pepper
  7. Add in the noodles and soya sauce
  8. Cook for a further 2 minutes
  9. Enjoy
