Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Chocolate Chip Sandwich Cookies. These cookies are super easy to make and I’ve sandwiched them together with a chocolate ganache. You can also use a dairy free ice cream to create a tasty but simple dessert.

For the chocolate cream:

  1. Preheat the oven to 180 oC and line two baking sheets with parchment paper
  2. Cream the dairy free spread, caster sugar and brown sugar until light and fluffy
  3. Mix in the egg
  4. Add the flour and stir until well combined
  5. Stir through the chocolate chips
  6. Place teaspoons of mixture on the baking sheets, leaving room for the cookies to spread
  7. Bake in the centre of the oven for 15 minutes

     

  8. Allow to cool completely
  9. Make the filling by beating together the dairy free spread, icing sugar and melted dairy free dark chocolate
  10. Sandwich the cookies together with the chocolate filling
