Hello everyone, I’ve been in the kitchen baking some Gluten and Dairy Free Raspberry Choc Chip Cookies. I’ve had a little break from baking as I seemed to do a tonne of it in December. I say a break – I think I lasted only two weeks. I started easy with some chocolate chip cookies with fresh raspberries. I’ve also got plans to make a chocolate ginger loaf cake later on int he week. I’ll share the recipe for that if it works out well.

Raspberry Choc Chip Cookies (Gluten Free, Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC and line two baking sheets with parchment paper

Cream together the dairy free spread, caster sugar and brown sugar until light and fluffy

Mix in the egg and gluten free flour

Stir through the dairy free chocolate chips

Divide the mixture into 12 balls of cookie dough and gently fold a raspberry into each one

Place 6 cookies on each tray and flatten slightly

Bake for 10-12 minutes

Allow to cool on the baking sheet for 10 minutes and then transfer to a wire cooling tray
