Hello everyone, welcome to my latest lunch recipe for Gluten and Dairy Free Prawn Chorizo Rice Bowl. I promised a few weeks ago I would share a couple of new ideas for lunch time or lighter bite meals. You can put this together pretty quickly and works perfect for lunch or a lighter dinner. I choose to serve mine with a simple cucumber and tomato salad.
I made a delicious spiced cherry and apple crumble for pudding the other day. I’ll make sure I get that recipe typed up and shared on here later in the week.

Prawn Chorizo Rice Bowl (Gluten Free, Dairy Free)
Ingredients
Instructions

Cook the rice according to the instructions on the packet and set aside

Place the olive oil, chorizo, garlic and onion into a shallow pan over a medium heat

Cook for a couple of minutes then add in the prawns and cook until they turn pink, a couple of minutes

Stir through the cooked rice and fresh coriander

Season to taste and serve, I added in some cherry tomatoes and cucumber
