Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Prawn Tom Yum Soup.

I can’t believe how cold it has been over the last few days and it is to be -7 tomorrow night!  As I live near the coast it is not often we get snow and ice but it has been a white out for the last couple of mornings.  It was all too much for Ollie cat and he spent the day curled up in a ball in bed – some days I actually wish I was Ollie.  Luckily the next two recipes I have to share this week are real winter warmers – a spicy beef pasta bake and this lovely prawn tom yum soup.

Tom Yum soup is a Thai soup with a hot and sour flavour, Tom Kha is similar but has a coconut milk base.  This recipe is perfect if you want a healthy lunch but are short on prep time as it only takes 15 minutes.  I kept it simple by using stir fry veg, prepped prawns and tom yum paste which I picked up in Tesco.  As with most of my recipes you can customise this to suit your own tastes – pick what veggies you want to use and you can swap the prawns for chicken or extra vegetables.

Prawn Tom Yum Soup (Gluten and Dairy Free)

A fragrant Thai soup with prawns and vegetables

Ingredients

Instructions

  1. Place the oil in a pan over a medium heat
  2. Add in the veg and stir fry for a couple of minutes
  3. Add in the tom yum paste and cook for 1 minute
  4. Pour in the vegetable stock and simmer for 5 minutes
  5. Add in the prawns, sriracha, sugar, lime juice and fish sauce
  6. Cook for 5 minutes
  7. Add in the coriander and season to taste
