Hope you all had a good weekend – I lost hours of time in my happy place working behind the scenes on the website!  Hope you are finding it easier to navigate and I’m loving the fact people are adding in their comments and feedback on the recipes.

For the next couple of weeks I’m going to trial removing my Sunday coming soon post.  Don’t worry this won’t mean I share any less recipes I just want it to feel a little bit less planned and structured.  I already have twenty recipe posts sitting as draft and another sixty in some stage of development so there will definitely be lots of exciting recipes being posted.

Today I’m sharing with you a real winter warmer – chilli beef pasta bake!  Onion, peppers and minced beef is cooked in a spiced tomato sauce and stirred through pasta.  I’ve then topped it with some dairy free cheese and baked in the oven.

A hearty pasta dish with spiced chilli beef, peppers and onions

Ingredients

Instructions

  1. Cook the pasta per the instructions on the packet while you are making the sauce

  2. Add the olive oil to a large shallow pan over a medium heat

  3. Saute the onion, garlic, pepper, chilli and beef for 5 minutes

  4. Pour in the passata and simmer for 20 minutes

  5. Stir in the sugar, oregano, basil and season to taste

  6. Stir through the cooked pasta

  7. As an option you can top with some dairy free grated cheese and place under the grill for a couple of minutes
