Hello everyone, welcome to my latest fun baking recipe for this Gluten and Dairy Free Giant Cookie. I have a number of gluten free cookie recipes on my website but some reason could never master the giant cookie. Every time I made one I either couldn’t get it to cook properly in the middle or it was over cooked and fell apart. Thankfully this time I’ve managed to get the recipe just right.
I’ve went with the standard dairy free chocolate chips but you can add in whatever extras you like. I decided to top mine with a drizzle of dairy free white chocolate and a few unicorn sprinkles.

Giant Cookie (Gluten Free, Dairy Free)
Preheat the oven to 180 oC and grease a 6" cake tin
Cream together the dairy free spread, caster sugar and brown sugar until light and fluffy
Mix in the egg and gluten free flour
Stir through the dairy free chocolate chips
Spoon into the cake tin and spread flat
Bake for 15 minutes
Allow to cool in the cake tin for 10 minutes and then transfer to a wire cooling tray
I decorated my cookie with a drizzle of dairy free white chocolate and sprinkles
