Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Cinnamon Biscuits.

I made these little cinnamon biscuits as I just fancied doing some baking that was a little plainer.  I wanted something to go with my afternoon coffee that wasn’t a giant piece of cake.  They hit the spot and tasted amazing but for some reason they remind me of Christmas!  I feel like I should be sharing these in December not in May when the sun is shining.  Maybe next time I make them I won’t use a star shaped cookie cutter.

This weekend I’m hoping to bake some mini Hummingbird cakes with pineapple, banana and walnuts.  What have you been baking during lockdown?

Instructions

  1. Whisk together the dairy free spread, brown sugar and icing sugar until light and fluffy
  2. Beat in the egg
  3. Stir in the gluten free flour and cinnamon
  4. Wrap in cling film and chill in the fridge for an hour
  5. Preheat the oven to 180 oC
  6. Roll out the dough until 3-5mm thick
  7. Cut out 24 cookies using the cutter of your choice
  8. Place on a lined baking sheet and bake for 12-15 minutes
  9. Cool the cookies on a wire rack
  10. Make the icing by stirring together the icing sugar and dairy free milk
  11. Drizzle over the top of the cookies
