Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Peanut Butter and Jelly Muffins. 

I can’t really remember when exactly I started the website but I got an announcement on twitter saying that I joined 6 years ago.  I opened the account when I started posting my recipes so Free From Favourites must be 6 years old this week!  It’s weird because I don’t feel like I have been doing the website that long but on the other hand I can’t really remember life without it.

I make these simple little muffins all the time and only released that I had never shared the recipe on the website.  I usually make a batch of these and put them in the freezer to enjoy during the week.  They are amazing heated in the microwave for 30 seconds and served with a big cup of coffee.

  1. Preheat the oven to 180 oC

  2. Line 8 muffin moulds with paper cases

  3. Whisk together the caster sugar, dairy free spread and peanut butter

  4. Beat in the eggs one at a time

  5. Fold in the gluten free flour

  6. Three quarter fill each muffin case with the batter

  7. Drop some raspberry jam on the top of each muffin

  8. Bake in the oven for 25 minutes
