Hello everyone, welcome to my latest recipe for this delicious Gluten and Dairy Free Lemon Drizzle Cake. As I have a real sweet tooth I usually prefer to make more chocolate, peanut butter and caramel style cakes. For a little change I made a lemon drizzle loaf cake which went down very well with the rest of the family. It’s a nice simple recipe and a cake you can quickly put together to enjoy in the summer sunshine.
It is Ollie cat’s birthday tomorrow and my niece has requested a cake with strawberries. I think I’ll make my Victoria sandwich recipe and fill it with fresh strawberries. If I remember I’ll try and update the photography as it was one of my original recipes and probably looks a bit out of date now.
If all goes well then this should be the last post I put on the website in this current format. I’m hoping to be able to go live with the new site in the next couple of days. I do have one last task that I need to complete to make sure all the links you have direct you straight to the new recipes.

Lemon Drizzle Cake (Gluten & Dairy Free)
For the cake:
For the drizzle:
Preheat the oven to 180 oC
Place all the cake ingredients into a large bowl and beat until well combined
Grease and line a 900g loaf tin
Pour the cake into the loaf tin
Bake in the centre of the oven for 45 minutes
Remove from the oven and allow to cool for 5 minutes
Remove from the cake tin and allow to cool completely on a wire rack
Mix together the icing sugar and lemon juice
Drizzle over the top of the cake
