Veggie Burgers (Gluten Free, Dairy Free)

Instructions

Place the lentils in a pan of water and boil for about 12 minutes

Remove from the heat and drain the lentils

In a shallow pan sauté the onion in a little olive oil for a couple of minutes

Blitz the mushrooms in a food processor until they form a smooth paste

Add in the garlic, chilli, basil, oregano and mushroom paste

Cook until all the moisture has evaporated, about 5-10 minutes

Stir in the lentils and season with salt and pepper

Blitz the bread slice in the food processor until it forms breadcrumbs

In a large bowl combine the mushroom and lentil mix, the breadcrumbs and the beaten egg

Mix until well combined

Divide into four, shape into burgers and coat in the polenta

Cook in a shallow pan over a medium heat for about 4 minutes on each side

Serve in a gluten free bun with dairy free cheese, mayo, chutney and rocket
