Heat a drizzle of olive oil in a large pan over medium heat

Add the chicken pieces and cook for 5 minutes

Add the onion and cook for a further 5-6 minutes

Add the garlic, ginger, lemon juice, lemongrass and season

Stir in the curry paste

Pour in the coconut milk and bring to a simmer

Simmer for 5 minutes

Serve with the boiled rice
