Hello everyone, thank goodness the website is back up and running. I can finally share a new recipe for Gluten Free and Dairy Free Banana PB Quesadilla. I have a seen a lot of sweet tortilla recipes but I wasn’t sure if it was something that I fancied trying myself. I bit the bullet and decided to give it and try and now I love it. I went with a traditional banana and peanut butter filling but you can pick your favourites.

New Website

Thanks to everyone who sent me kind messages and requested recipes when the website was down – not so much to the people who sent me the rude aggressive messages! After the experience of the last few days I’m looking into changing my hosting provider as it was a full four days of drama.

I’ve also decided to come back online with the new style website. I hope you find it much easier to navigate and search for your favourite recipes. If you find anything not working properly please let me know. Also I’ve only got half the recipes converted to this new format. If your favourite recipe isn’t here yet do give me a shout and I can send it across to you. I’ll work away in the background converting and publishing a few old recipes each day.

Ingredients

Instructions

  1. Spread one of the tortilla wraps with peanut butter and the other with the mashed banana

  2. Sandwich together so the banana and peanut butter are together

  3. Place in a shallow pan over a medium to high heat

  4. Cook for a couple of minutes on each or til toasted

  5. Dust with icing sugar and cut into quarters before serving
