Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Apple and Courgette Loaf.

Hope you are all having a good week so far.  I’m back into the routine of work back at the kitchen table – like most people I would have loved to have been going back to the office after Christmas.

I’m still working on website to enhance each recipe card with the nutritional value and sometime new photography.  I’ve changed the comments section and it should now be much easier to use.  If you like a post of recipe you rate it and/or leave a comment without having to register or leave your email address.  So if you have a recipe you like please pop on and rate it – that helps me understand what recipes you find useful.

Today’s recipe is for a healthy(ish) loaf cake as it is packed with apple and courgette.  I enjoyed a big slice of this with a little vegan butter  and a cup of coffee.

Apple and Courgette Loaf (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 15 mins Cook Time 35 mins Total Time 50 mins

Description

A light loaf cake with apple, courgette and a pinch of cinnamon

Ingredients

Instructions

  1. Preheat the oven to 180 oC

  2. Grease and line a 900g loaf tin

  3. Stir together the dairy free milk and lemon juice

  4. Leave for 10 minutes to thicken

  5. Place the gluten free flour, brown sugar and cinnamon in a large bowl

  6. Stir in the milk mixture, applesauce, egg, chopped apple and grated courgette

  7. Pour into the loaf tin

  8. Bake for 35 minutes
