Hello everyone, here it is my first Christmas recipe of 2021 for this Gluten and Dairy Free Christmas Bakewell Cake. This is such a simple but delicious cake to kick off your seasonal baking. Beautiful fluffy sponge with swirls of Christmas mincemeat, topped with flaked almonds and dusted with icing sugar.

Christmas Bakewell Cake (Gluten Free, Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC and grease and line a 7" round cake tin

Beat together the caster sugar and dairy free spread until light and fluffy

Whisk in the eggs one at a time

Stir in the gluten free self raising flour and Christmas mincemeat

Pour into the cake tin and sprinkle on the flaked almonds

Bake in the oven for 30 minutes

Remove from the cake tin, allow to cool completely and dust with icing sugar before serving
