Hello everyone, I’ve been in the kitchen creating a new baking recipe for Gluten and Dairy Free Shortbread Cookie Bars. I make shortbread quite a bit that wanted to experiment with the recipe a little and turn them into cookie bars. I was a little short on dairy free dark chocolate chips so also added in some dairy free white chocolate chunks as well. A lot of my baking projects seem to turn out like this – just based on what I have in the store cupboard.

I’m having a little think about some new gluten and dairy free Easter recipes to share. As Easter baking always involves a lot of chocolate I need to have a think about good dairy free alternatives. I have an idea brewing and will keep you posted if it works out well. If you have any ideas please let me know.

  1. Preheat the oven to 150 oC
  2. Line a 6" by 6" tray bake tin with tinfoil
  3. Cream together the dairy free spread and caster sugar until smooth, about 3 minutes
  4. Add the water, granulated sugar, flour and ground rice/polenta
  5. Stir in the dairy free chocolate chips
  6. Mix until it clumps together into a ball
  7. Press into the tray bake tin
  8. Bake in the centre of the oven for 30 minutes
  9. Remove from the oven and allow to cool completely
  10. Lift out of the tray bake tin and cut into 9 bars
