Gluten and Dairy Free Mexican Sweet Potato Toasts

Sweet Potato Toasts

  • 1 large sweet potato
  • 8 cherry tomatoes quartered
  • 1 avocado sliced
  • 2 eggs
  • 2 slices smoked bacon
  • 1 Spring onion sliced


  • Preheat the oven to 180 oC
  • Clean the sweet potato and slice into 4 1/2cm slices
  • Place the potato slices on a baking sheet
  • Bake in the oven for 25 minutes or until cooked
  • Poach the eggs in boiling water until the whites cooked but the yolks runny, about 3 minutes
  • Fry the smoked bacon until crisp
  • Place the sweet potato slices on a plate and top with the tomatoes, avocado, spring onion, poached eggs and smoked bacon
