I absolutely love pizza, and while I’ve found a lot of restaurants serving good gluten free bases I miss the cheese as I haven’t come across one that offers dairy free cheese yet. The gluten free bases I’ve tried have always been thin crust so I thought I would have a go at making the Chicago style deep dish pizzas.

Note: the recipe for the pizza sauce makes a lot of sauce but it is handy to keep in the freezer for future use

Gluten and Dairy Free Chocolate Chip Muffins

The other day I really fancied a simple muffin to take to work for breakfast to enjoy with my giant soya cappuccino. I decided to make a chocolate chip muffin and was surprised that I didn’t have a recipe for it on my website. I had loads of different muffin recipes from peanut to lemon, strawberry to pumpkin but no simple chocolate chip muffin. So, here is the simple but tasty recipe for gluten and dairy free chocolate chip muffins.

Gluten and Dairy Free Grilled Coriander and Lime Chicken

The smell of the fresh coriander marinade is amazing and the best part of making this recipe. I decided to experiment with blending fresh herbs with a variety of other flavours to make super fresh marinades. This one combines fresh coriander with the zestiness of the lime juice and is balanced with other tastes such as chilli and garlic. I served this chicken on a gluten free tortilla wrap but it would be perfect in a salad or with some vegetable rice for a more substantial meal.

Gluten and Dairy Free Coffee and Walnut Cake

A real traditional classic cake – coffee and walnut, I thought it deserved the gluten and dairy free treatment. This cake is really easy to make and uses fairly simple ingredients. The result, hopefully you’ll agree, is a cake that is light and moist with the right balance of coffee, not too strong but not too weak! You could also make this cake in a 2lb loaf tin and leave off the coffee icing.

When I was a little girl there was nothing more exciting than a chicken kiev on the rare occasion we had them. In reality they probably weren’t the best quality chicken, dripping in butter and coated in some kind of hybrid batter crumb!

I decided to have a go at making a healthier gluten and dairy free version using fresh chicken breast and polenta crumb. Hopefully you enjoy them better than the original. It’s also a brilliant retro classic that had to be given my gluten and dairy free treatment.

Gluten and Dairy Free Cherry Choc Chip Oreo Style Cheesecake

The inspiration for this recipe came from the Allergy & Free From Show last week. I was discussing favourite free from recipes and my love of cheesecake with the guys at the Udi’s stand. They gave me a packet of their new gluten and dairy free oreo style cookies to so I could experiment with them as a cheesecake base – and this recipe is the result! The cherry choc chip oreo style cheesecake – all gluten and dairy free.

Lizi’s Launch a Gluten and Dairy Free Granola

Hello Everyone

The guys over at Lizi’s Granola got in touch to say that they have launched a gluten and dairy free granola that has been approved by Coeliac UK. I was very spoilt as they sent me a packet to try and I thought I would share my thoughts on it with you guys.

It comes in a nice bright resalable bag and is clearly marked as gluten free and endorsed by Coeliac UK:

The granola has had the glycemic load (GL) measured to assure that each serving is full of fibre and contains slow release energy meaning you feel fuller for longer. The granola has the following nutritional value:

So let me get to the granola itself, its packed full of oats, seeds and nuts. The main thing I liked about this granola was it tasted lovely and toasted but wasn’t too sweet. It was great on it’s own with a drizzle of almond milk for a filling breakfast.

I decided to make a little breakfast sundae and topped the granola with some natural soya yoghurt and mixed berries, a very tasty breakfast treat:

This granola is a great addition to my gluten and dairy free store cupboard. You can enjoy the granola as it or it is a great base for you to add your own flavour to, I’m thinking stewed apples, yoghurt, banana, choc chips, cinnamon, the list goes on (but maybe not all at once!)

Introducing….Everything But The Cow

I was excited to meet the girls from Everything But The Cow at the Allergy Show in London last weekend and wanted to share their great product with you. I’m on a high protein diet due to medical issues and it can be hard to incorporate protein into your diet. I did get some dairy free protein powder but the brand I tried didn’t mix very well and I ended up with lumpy almond milk!
