Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Spiced Banana Gingerbread.
This cake is probably a bit more wintery but I made it a couple of weeks ago when it poured with rain all day and all I wanted was a giant slice of comforting cake. I have just been able to get icing sugar for the first time since March so I’ve been baking plainer cakes topped with a sprinkle of icing sugar rather than frosting.
I used to prefer cupcakes with lots of frosting but during the last 4 months of lockdown I’ve made more cakes like this banana gingerbread. I thought I was maybe growing up and loosing my sweet tooth but I think it is more to do with the fact I can eat more of it!
Hopefully you like this type of cake too as I have a few recipes like this coming up. I think the next one I’m due to share is a chocolate chip muffin loaf.
