Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Chocolate Banoffee Pie.
I’m totally behind with the website this week – I made the mistake of not typing up all my posts on Sunday. As usual I’ve had a busy week including being out and about every night as well as busy days at work. On Monday night I met a friend for a curry at Dishoom – they have a lot of choices that are clearly marked gluten and dairy free. Tuesday night I was at my sister’s and Wednesday night was a pub quiz (including some gluten free burgers).
Today’s recipe is for a real treat dessert – chocolate banoffee pie. You can buy the dairy free coconut condensed milk and dairy free whipping cream from a number of online health food stores or if you are lucky like me from your local health food shop.

Chocolate Banoffee Pie (Gluten & Dairy Free)
Ingredients
For the base:
For the filling:
Instructions

Mix together the crushed biscuits and melted dairy free spread

Press into the base of a pie dish

Chill in the fridge for 20 minutes

Make the caramel filling by placing the brown sugar and dairy free spread in a small saucepan over a low heat

Stir until melted and well combined

Pour in the coconut condensed milk and cook for 5 minutes until you have a thick golden caramel

Remove from the heat and stir in the dark chocolate

Pour over the biscuit base and return to the fridge for a couple of hours

Top with the sliced banana

Whip the cream and spread on top of the pie

Dust with a little cocoa powder before serving
