Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Carrot Cake Pancakes.

I never did get caught up on my website posts this week!  I have a long train trip first thing tomorrow morning so I’m planning to stay focused and concentrate on getting all my posts for next week prepped and ready to go.

I went into Costa this morning on the way to work to get a little dairy free bonfire spiced latte to be told they were finished as the Christmas drinks were now in!  Bonfire night hasn’t even happened yet! I went with a vanilla latte instead and sulked for a bit.

Today’s recipe is packed with warming carrot cake flavours and would make a perfect start to your day if you have bonfire activities planned.

  1. Whisk together the flour, sugar, egg and milk
  2. Stir in the grated carrot, walnuts and cinnamon
  3. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  4. Repeat until you have cooked all the pancakes
  5. Serve with some whipped coconut cream
