Gluten & Dairy Free Avocado Steak Sandwich

Ingredients

  • 2 slices gluten free bread
  • 2 thin frying steaks
  • 1 tbsp chilli jam I used Morrison’s Jalapeño jam
  • salt and pepper for seasoning
  • 1 tbsp mayonnaise
  • 2 ripe avocados
  • juice of half a lime
  • 1/2 red onion diced
  • 2 tsps coriander leaf
  • pinch chilli flakes
  • 1/2 ripe tomato diced

Instructions

  • Lightly toast the gluten free bread
  • Spread the toasted bread with the mayonnaise and chilli jam
  • Heat a shallow pan on a high heat
  • Add a drizzle of olive oil
  • Season the steaks and cook for a couple of minutes on each side
  • Set aside for a couple of minutes
  • Add the steak to the bread
  • Blend together the avocados, lime juice, red onion, chilli flakes and tomato
  • Season the guacamole and stir through the coriander leaf
  • Spread on top of the steaks
  • Serve with salad and chips
