Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Mango Prawn Fried Rice.
Hope you are all having a good week – this week has definitely been an improvement on last week for me. I fainted last Monday and hit my head off of the sink resulting in a bruised forehead and some concussion. I spent the rest of the week in a bit of daze and very confused about what life was all about! Anyway I’m completely on the mend and with the help of some good make up I look almost back to normal.
I’m so hungry as I write this post and really wish this dish was what I was having for dinner tonight when I eventually get round to making it. If you are missing out on your normal take away them try making this instead. Tasty fried rice with the addition of prawns, vegetable and mango to balance out any spice.

Mango Prawn Fried Rice (Gluten Free, Dairy Free)
Ingredients
Instructions

Cook the rice per the instructions on the packet and set aside

Add the olive oil to a shallow pan over a medium heat

Add the onion, peppers and garlic
-
Saute for 7 minutes
-
Add in the prawns and cook for a couple of minutes
-
Pour in the beaten egg and push around the pan for a couple of minutes until it scrambles

Stir in the cooked rice, mango, sriracha sauce, gluten free soy sauce, fish sauce and seasoning

Cook for a couple of minutes
-
Serve garnished with fresh coriander
