Help everyone, welcome to my latest recipe for Gluten and Dairy Free Roasted Spanish Almonds.

Thanks goodness it’s Friday – I’m looking forward to the weekend as it is both Father’s Day and my parent’s golden wedding anniversary.  Of course they will be celebrated very differently from how I imagined at the start of the year!  This week has been super busy and I still have a tonne to do but I think I’m just going to switch off and have a bath.

While I’ve been working at home I’m trying to make sure I have a sensible amount of snacks.  Working in the kitchen everyday does make it all a bit too easy to eat all day.  I made this simple little recipe last week so I had some healthy snacks.  These almonds also taste great stirred through your favourite salad.

  1. Preheat the one to 180 oC
  2. Place the almonds, olive oil, oregano, paprika and seasoning in a bowl
  3. Spread out the almonds on a lined baking sheet
  4. Roast in the oven for 15 minutes
  5. Allow to cool before serving
