Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Christmas Muffins. 

I can’t believe this is the last full week of recipes I’ll be sharing before Christmas.  I do have a couple of new recipes for the start of next week and then a couple of recipes right after Christmas on how to use your leftover turkey and mincemeat.

I’ve been enjoying taking a bit of time out to relax as well as get ahead with my Christmas prep.  Today I started making my Christmas puddings and I also made some shea butter, calendula and orange oil bath bombs.  I’ve had the all ingredients to make them for ages and it was nice to finally find the time to make them.  I thin they might be an early Christmas gift to myself.

Out of all the new recipes I’ve shared this year for Christmas I think this one is my favourite.  It wasn’t on the original recipe plan but came around after I was looking for an idea to finish the jar of mincemeat I had opened to make the iced mince pies.  I’ve used my basic muffin recipe and swirled through some mincemeat then topped with a sprinkle of brown sugar, cinnamon and flaked almonds.  After they cooled I’ve dusted them with a little icing sugar.  Perfect for a Christmas afternoon snack with a big cup of coffee.

Instructions

  1. Preheat the oven to 180 oC

  2. Line a muffin tin with 8 paper cases

  3. Beat together the caster sugar and dairy free spread until light and fluffy

  4. Whisk in the eggs one at a time

  5. Stir in the gluten free self raising flour and Christmas mincemeat

  6. Divide between the 8 muffin cases

  7. Top a sprinkle of brown sugar, flaked almonds and ground cinnamon

  8. Bake in the oven for 20 minutes

  9. Allow to cool and serve dusted with icing sugar
