Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Christmas Pie Bites.
I’ve got this post and one other cake recipe to share before Christmas. I’m not going to do my usual meal plan and three new posts next week as I’m sure you have a lot going on with Christmas. I have a couple of round ups I’ll share between Christmas and New Year and then it will be back to business as usual.
This year I bought a giant jar of Christmas mincemeat and have a fair bit leftover in the fridge. As I had already had dinner at lunchtime I made some pancakes for a treat when I got home from work. I added a tablespoon of mincemeat to the batter and dusted the finished pancakes with icing sugar. I wish I had taken a photo for the website – they tasted amazing.
Another use for leftover mincemeat is these Christmas Pie Bites. I’ve based this recipe on my peppermint crunch truffles and adjusted it to have a Christmas pie flavour.
