Penne Alla Vodka (Gluten Free, Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Penne Alla Vodka.

Hope you are all well and continuing to survive lockdown.  I spent a nice relaxing Sunday morning making new dividers for my planner.  I’m all about my planner – it helps me keep on top of my day job and everything I have to do for the website.

It was a good way to spent a couple of lockdown hours with my printer, laminator and corner rounder – all essential stationery items!  Everything is planned in detail from a monthly view of the recipes coming up on the website so I have a good mix, a weekly to do list and my daily work schedule and priorities.  I also have as section for doing the upcoming meal plans – the planner is almost a hobby itself!

Back to today’s recipe – I had penne all vodka a few summer’s ago when I went on a trip around Italy.  It has been on my to do list for ages so was happy when I finally got round to recreating it and photographing for the website.

Penne Alla Vodka (Gluten Free, Dairy Free)

Ingredients

Servings

• 200 g gluten free pasta
• 1 small onion (diced)
• 1 tbsp olive oil
• 2 garlic cloves (minced)
• 30 ml vodka
• 250 g canned chopped tomatoes
• 8 cherry tomatoes (halved)
• 1 tsp oregano
• 80 ml dairy free cream
• salt and pepper (for seasoning)

Instructions

1. Cook the pasta according to the instructions on the packet
2. Add the olive oil to a shallow pan over a medium heat
3. Sauté the onions and garlic for 5 minutes
4. Add in the tomatoes and cook for a couple of minutes
5. Pour in the vodka and simmer for 5 minutes
6. Stir in the dairy free cream, oregano and seasoning
7. Simmer for 5 minutes
8. Stir through the cooked pasta and serve immediately
