Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Prawn Sesame Toasts.

When lockdown started it was the plan to have a virtual take-away night with a friend every Saturday.  Unfortunately a lot of the takeaway restaurants decided to close during lockdown, which is understandable.  I think this put too much pressure on the few that remained open and two weeks in a row my curry was pretty poor.

So I’ve gone back to making my own takeaway to continue the virtual Saturday night dinner.  Last week I went for Chinese and decided to make a side dish of prawn sesame toasts.  I haven’t had these since being diagnosed as coeliac but was pretty pleased with how they turned out.

Instructions

  1. Place the prawns, garlic, chilli, egg white, cornflour, seasoning and spring onions in a blender and blitz until smooth
  2. Cut the crusts from the bread and then cut each piece of bread into 4 triangles
  3. Spread the paste on one side of the bread and top with the sesame seeds
  4. Heat about 1" of oil in a pan over a medium to high heat
  5. Cook the toasts for about 2-3 minutes on each side
  6. Enjoy
