Welcome to my latest Gluten and Dairy Free Christmas Mincemeat Loaf.

I feel a bit sorry for my dad and brother-in-law – they both have birthdays close to Christmas and I always make them seasonal themed cakes.  This one we enjoyed on my brother-in-law’s birthday and Dad’s marble cake recipe is coming up next week.

Think of this loaf cake as a very light version of fruit cake.  I’ve used a basic loaf sponge recipe and folded in a few tablespoons of Christmas mincemeat.  It gives you that lovely warm fruity spiced flavour without being too heavy.  It was a hit with the family including my two year old niece and I think it will become a seasonal favourite in my family.

Christmas Mincemeat Loaf (Gluten & Dairy Free)

Prep Time 10 mins Cook Time 50 mins Total Time 1 hr

Ingredients

Instructions

  1. Preheat the oven to 170 oC

  2. Grease and line a loaf tin

  3. Whisk together the caster sugar, eggs, dairy free milk and melted dairy free spread

  4. Stir in the gluten free flour and mincemeat

  5. Spoon into the loaf tin

  6. Bake for 50 minutes

  7. Remove from the loaf tin and allow to cool

  8. Dust with icing sugar before serving
