Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Egg & Tomato Bagel Melts.

It has been such a busy week I don’t no whether I’m coming or going – and next week is shaping up to be the same!  It’s also been a busy weekend trying to get caught up on everything.  I’m working through next week’s post for the website at the moment and then it’s on to the food shop for the week – I know how to have an exciting time!

Today’s recipe is super simple and is really just an idea for a quick breakfast.  Toasted gluten free bagels topped with scrambled eggs, spring onions, tomatoes and a sprinkle of dairy free cheese.

Egg & Tomato Bagel Melts (Gluten Free, Dairy Free)

Gluten Free and Dairy Free Egg & Tomato Bagel Melts is a simple little free from breakfast recipe ideal for any day of the week.

Ingredients

Instructions

  1. Toast the bagels and set aside
  2. Beat together the eggs, seasoning and dairy free milk.  Melt the dairy free spread in a pan.  Pour in the egg mix and push around until scrambled.
  3. Top the four bagel halves with the scrambled egg.  Sprinkle on the grated cheese and top with the cherry tomatoes.  Place under the grill for a couple of minutes until the cheese melts.  Top with the sliced spring onions.
