Hello everyone, tonight’s recipe is for Gluten and Dairy Free Thai Chicken Dip. Not sure about you but I find it difficult to get a good dairy free dip. I tend to usually just default to either hummus or salsa with plain tortilla chips.
A few months ago I shared a recipe for how to make a rosemary and cranberry dip and since then I’ve had on my to do list to create another version. This time I’ve gone with a dip inspired chicken which I’ve served with some prawn crackers. This dish works well as a sharing starter or for a light lunch.

Ingredients
Instructions

Heat the olive oil in a pan over a medium heat

Add in the chicken, onion, pepper and minced garlic

Saute for 10 minutes

Set aside to cool

Place the mayo, peanut butter, sweet chilli sauce and basil in a bowl

Stir until well combined

Season to taste

Stir the chicken and vegetable mix

Scoop into a bowl and serve with the Thai prawn crackers
