Hello everyone, my latest post is for these delicious Gluten Free and Dairy Free Bacon, Egg and Cheese Burritos. For me those three ingredients are the ultimate breakfast combination. I topped mine with a little tomato salsa that I had leftover from dinner. Served with some fresh orange juice and a cup of soya milk cappuccino is the perfect start to the day.
This recipe is perfect for using up bits and pieces you have in the fridge and freezer. If you are like me you always have one gluten free tortilla wrap in the freezer you aren’t sure what to with.

Bacon, Egg and Cheese Burritos (Gluten Free, Dairy Free)
Add a drizzle of olive oil in a shallow pan
Cook the bacon until crisp, about 4 minutes each side
Set aside while you cook the eggs
Whisk together the eggs and dairy free milk, season with salt and pepper
Add 1 teaspoon of dairy free spread to a pan over a medium heat
Scramble the eggs for a couple of minutes
Microwave the gluten free tortilla wraps for 30 seconds
Fill with the bacon, eggs and dairy free cheese
Roll up tightly and serve
