Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Soft Chewy Toffee.

I was super excited last week to find some dairy free coconut condensed milk which I bought here –> http://www.veganstore.co.uk/

Finding a dairy free condensed milk has opened up a number of new recipe possibilities for me to try out.

One of things I really miss is soft chewy toffee.  When I was little my parents always bought me a big box of Thornton’s Special Toffee for Christmas every year – I loved the stuff.

This recipe is very easy to make, it doesn’t require sugar thermometers or anything fancy.  I kept my toffee in the fridge to keep it fresh and the perfect chewy consistency.

  1. Grease an ice cube tray and set aside

  2. Place the brown sugar, coconut oil, honey/maple syrup and condensed coconut milk in a pan over a medium heat

  3. Bring to the boil  and then reduce the heat until it is simmering

  4. Simmer for 10 minutes while stirring gently with a balloon whisk

  5. Remove from the heat and pour into a jug

  6. Fill the ice cube tray with the toffee

  7. You can leave for a few hours to set or place in the fridge and it will set within the hour

  8. Remove the toffees from the ice cube tray and wrap in oil or wax paper
