Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Lime and Coconut Cupcakes.  

I know it’s been a bit tricky to get gluten free flour recently so I decided to invest in a 16kg bag from the Doves Farm website.  I tend to bake a lot, including pancakes and waffles for breakfast, so that will keep me going for ages and ages.  I’m not sure if you guys have been able to get flour at the supermarket or have any top tips on where to source it from?

One of the first things I baked last week was these lime and coconut cupcakes.  The weather was really warm and I thought the tropical flavour combination worked well with a summer theme.  Unfortunately in Scotland it is back to being windy and a little bit colder – so this week’s baking has been a more homely spiced banana gingerbread.

Instructions

  1. Preheat the oven to 180 oC
  2. Beat together the dairy free spread and caster sugar until light and fluffy
  3. Beat in the eggs one at a time
  4. Stir in the flour and lime zest

  5. Divide between 9 muffins cases and bake for 20 minutes

  6. Remove from the oven and allow to cool completely
  7. Make the frosting by beating together the dairy free spread, icing sugar and coconut until light and fluffy

  8. Pipe onto the cupcakes
