Hello everyone, welcome to my latest baking recipe for these delicious Gluten and Dairy Free Coffee Choc Chip Bars. I wanted to make a tray bake but something that wasn’t too chocolatey for a change. I decided to go with a coffee flavour and make something similar to a blondie.

As I couldn’t stay fully away from chocolate I decided to add in some dairy free chocolate chips to balance the flavour and give it a mocha style taste. You can adjust the amount of coffee to add to suit your preferences and the dairy free chocolate chips are also completely optional in this recipe. I would like to make this again adding in some white chocolate chunks and maybe some cinnamon – I need to have a little experiment.

Ingredients

Instructions

  1. Preheat the oven to 180 oC

  2. Line a 8" baking tin with parchment paper

  3. Stir together the coffee, dairy free spread and brown sugar

  4. Whisk in the egg, baking powder and gluten free flour

  5. Stir in the dairy free chocolate chips

  6. Pour into the cake tin and bake for 25 minutes

  7. Allow to cool in the tin before cutting into 9 slices
