Ingredients

  • 9 eggs
  • 3 smoked bacon
  • 3 tbsps spinach chopped
  • 3 tbsps onion diced
  • 3 tbsps tomato chopped
  • 3 pepper chopped
  • 3 tbsps dairy free cheese
  • pinch of chilli flakes

Instructions

  • Preheat the oven to 180 oC
  • Add a drizzle of olive oil to shallow pan over a medium heat
  • Saute the bacon, onion, garlic, onion and peppers for 5 minutes
  • Whisk the eggs in a large bowl
  • Stir in the bacon mixture, spinach, tomatoes, cheese and seasoning
  • Grease a casserole dish
  • Pour in the gg mixture
  • Bake for 30 minutes
  • Allow to cool slightly before slicing and serving
