Gluten & Dairy Free Cheese & Tomato Potato Bake

Ingredients
  

  • 350 g potatoes sliced finely
  • 2 tomatoees sliced finely
  • 1 red onion diced
  • 50 g dairy free cheese grated
  • 180 ml dairy free cream
  • salt and pepper for seasoning

Instructions
 

  • Preheat the oven to 180 oC
  • Grease a medium sized casserole dish
  • Make alternate layers of potatoes, tomatoes, onion and cheese
  • Season with salt and pepper
  • Pour over the cream
  • Cover with tin foil and bake for 50 minutes
  • Remove the foil and bake for a further 20 minutes
