Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Spiced Red Lentil & Chorizo Soup. I can’t believe it is going to be September tomorrow. I thought I would mark the start of the seasons changing with a new soup recipe. As usual, double check your chorizo before buying as it sometimes contains milk. A quick search at the supermarket should turn up a brand without milk. I used Tesco own brand to make this recipe.

Spiced Red Lentil & Chorizo Soup (Gluten Free, Dairy Free)
Ingredients
Instructions

Place the olive oil in a large pan over a medium heat

Add in the garlic, ginger, onion, chorizo, carrot, curry powder, garam masala and chilli flakes

Saute for 5 minutes

Stir in the lentils and tomato puree

Pour in the vegetable stock and coconut milk
-
Bring to the boil

Simmer for 20 minutes

Blend the soup and season with salt and pepper

Serve topped with some herbs and an extra sprinkle of chilli flakes
